    Extra virgin olive oil

    Extra virgin olive oil, or EVO , is an excellence in the culinary field, as well as being rich in nutritional properties and a valid ally in aesthetics.

    To be defined as " EVO" the oil must meet the strict criteria of specific European legislation. The fundamental characteristics concern the extraction method: EVO oil is obtained only from the first pressing of the drupes, rigorously carried out with mechanical methods and in the absence of chemical processes.

    In our farm we proceed with cold extraction, which ensures the final product has superior organoleptic characteristics compared to other edible oils. Thanks to this minimally invasive process, our EVO oil manages to maintain a delicate aroma and a full flavor which make it delicious even raw.

    Property

    EVO oil also boasts excellent nutritional properties, especially when compared to other edible oils. It is in fact rich in vitamins, specifically those of group E, which help fight free radicals and therefore counteract cellular aging, and those of group D, which strengthen the immune, bone and cardiovascular systems. Extra virgin olive oil also has polyphenols and monounsaturated fatty acids which, if taken in the right quantities, help reduce the presence of LDL cholesterol (the so-called "bad cholesterol").

    Finally, among the positive sides of this food we remember the benefits for beauty. Thanks to its antioxidant and anti-inflammatory properties, EVO oil applied topically manages to nourish, soothe and elasticize skin and hair. For this reason we find it included among the ingredients of many hygiene and body care products.

    How can you enjoy it?

    Extra virgin olive oil is an indispensable element in the Italian gastronomic tradition. It is also highly appreciated in the rest of the world thanks to its delicate flavour, its excellent nutritional properties and its great versatility in the kitchen.

    The healthiest way to enjoy EVO oil is raw. Adding a drizzle of oil to dishes and side dishes, both hot and cold, gives a Mediterranean flavor to recipes without affecting the antioxidant effect of the polyphenols, which would instead be damaged by the heat of cooking. We find raw oil in several typical Italian recipes such as panzanella, bruschetta and Genoese pesto.

    However, EVO oil is mainly used in cooking. We find it in fried foods, which are the basis of many recipes, but also in pan-fried vegetable side dishes, in the preparation of many sauces, in roast meats, in baked fish... practically everywhere! EVO oil is also suitable for replacing butter in dessert doughs, such as shortcrust pastry or shortcrust pastry. Finally, let's remember that EVO oil is perfect for frying, as it tolerates high temperatures better than other edible oils.

    How to store it?

    EVO oil is a perishable food, but to preserve it correctly you just need to take a few precautions. Two main factors must be taken into consideration:

    • Temperature: always store EVO oil in a place and in a container that keeps it away from high temperatures (ideal cellars and understairs).
    • Light: despite the fact that it is often sold in glass to show its color and transparency, extra virgin olive oil should always be kept away from light. This in fact accelerates the degradation process. Where possible, therefore, prefer aluminum or dark glass containers.
