The properties of borlotti beans: the legume that "rolls"
Borlotti beans owe their name to the Lombard term borlare , meaning to roll or fall. They are a legume with American origins and in Italy we have only been consuming them for a few centuries, starting from the end of the Middle Ages. Borlotti beans are the seeds of the Phaseolus vulgaris plant and are kept inside its pod.
It is usually thought that this type of legume is a poor food because it is linked to peasant tradition. Those who could not afford the "noble" proteins of meat, in fact, resorted to consuming legumes, especially beans. However, this is not quite the case. Borlotti beans, for example, are a food rich in nutrients. This characteristic therefore makes them one of the main foods of those who today choose diets that exclude proteins of animal origin. Furthermore, combine the consumption of beans with cereals and you will have a rich and complete meal from a nutritional point of view.
So what are the nutritional properties of borlotti beans?
- They help keep cholesterol under control, protect the cardiovascular system and prevent heart disease.
- They facilitate intestinal regularity.
- They are an excellent ally for blood sugar control, so much so that they are often suggested in the nutritional plans of those suffering from diabetes.

- Store them in a cool, dry place, keeping them inside their packaging or in a glass jar closed with an airtight cap.
- You can store them in containers both in the refrigerator and in the freezer. In the latter case, it will not be necessary to defrost them before cooking as they do not contain water.

Borlotti beans are a legume rich in nutrients and easy to cook, even for those who are not cooking wizards. Our beans have a strong flavor and are excellent for preparing traditional dishes and slightly more exotic variations.
With our borlotti beans you can prepare tasty soups and broths, accompanied if you want by polenta. The most famous dish is "pasta and beans" which those with a sweet tooth can also enrich with potatoes, bacon and sausage.
If you love dedicating your time to cooking, you can test yourself by preparing some local dishes rich in calories. Pisarei and fasò originate from Piacenza and are dumplings flavored with a tomato sauce and lard. Moving to Piedmont, we find Paniscia alla Novarese , a risotto accompanied by pork rinds, cabbage, lard and a local sausage called salam d'la duja . Finally, a very important note. Remember to never consume raw borlotti beans. If not cooked, in fact, they contain phasin, a toxic substance that in the past was even used as a poison.
